ความปลอดภัยของอาหารจากแผงลอยในตลาดสัญจรเขตเทศบาลตำบลเมยวดี อำเภอเมยวดี จังหวัดร้อยเอ็ด
Abstract
การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อความปลอดภัยของอาหารที่จำหน่ายในตลาดสัญจรเป็นอย่างไร และการปฏิบัติด้านอาหารปลอดภัยของผู้ประกอบการในตลาดนัดสัญจรเป็นอย่างไร ในการศึกษาครั้งนี้เป็นการตรวจวิเคราะห์ความปลอดภัยของอาหารทั้งทางด้านเคมี ชีวภาพ และกายภาพ ในอาหารปรุงสำเร็จรูป โดยเก็บตัวอย่างอาหารจากแผงที่จำหน่ายในตลาดสัญจรเขตเทศบาลตำบลเมยวดี ในระหว่างเดือนสิงหาคม – กันยายน 2556 โดยใช้การเก็บข้อมูลจากแบบสัมภาษณ์ที่ผู้วิจัยสร้างขึ้นร่วมกับการสังเกต การตรวจวิเคราะห์อาหารด้านชีวภาพ ใช้ชุดทดสอบอย่างง่าย (SI – 2) ของกรมอนามัย และการตรวจวิเคราะห์ด้านเคมีส่งตรวจที่หน่วยตรวจสอบเคลื่อนที่เพื่อความปลอดภัยด้านอาหาร (Moble Unit for Food Safety) ผลการวิจัยพบว่า ความปลอดภัยด้านชีวภาพ มีการปนเปื้อนเชื้อโคลิฟอร์มในตัวอย่างอาหาร ร้อยละ 75.3 รองลงมาเป็นภาชนะอุปกรณ์ พบร้อยละ 59.7 มือผู้สัมผัสอาหาร 27.8 และมีแนวโน้มการพบเชื้ออาหารที่เป็นของเหลวมากกว่าชนิดอื่น ความปลอดภัยด้านเคมี พบว่าไม่มีการปนเปื้อนสารกำจัดศัตรูพืช (กลุ่มคาร์บาเมทและออร์กาโนฟอสเฟส) การปนเปื้อนบอร์แรกซ์ ฟอร์มาลิน กรดซาซิลิซิลิค และไฮโดรซัลไซด์ ใช้การเก็บตัวอย่างทุกชนิดที่มีจำหน่าย ไม่พบการปนเปื้อนดังกล่าว และในการตรวจสารโพลาร์ในน้ำมันทอดซ้ำ พบว่าผ่านเกณฑ์ทุกตัวอย่าง ความปลอดภัยด้านกายภาพ ไม่พบการปนเปื้อนที่ไม่ได้เป็นส่วนประกอบของอาหาร การปฏิบัติด้านอาหารปลอดภัยของผู้ประกอบการอาหาร สุขวิทยาส่วนบุคคลของผู้ประกอบการ พบว่า มีลักษณะแต่งกายไม่ถูกต้องเกือบทั้งหมด สวมเสื้อกันเปื้อนสีต่าง ๆ กันไป ไม่มีสีขาวเลย ไม่มีการสวมหมวก มีการล้างมือหลังจากเข้าห้องน้ำทุกคน ส่วนใหญ่ล้างด้วยน้ำเปล่า โดยเช็ดมือกับผ้ากันเปื้อนที่สวมใส่ เมื่อไม่สบายส่วนใหญ่ไม่หยุดพัก แต่จะมีคนมาคอยช่วยขาย การสุขาภิบาลสิ่งแวดล้อมในตลาดนัดสัญจร พบว่า ไม่ผ่านเกณฑ์ทั้ง 8 ด้าน ประกอบด้วย ด้านการบริหารจัดการสิ่งแวดล้อม สุขลักษณะทั่วไปของตลาด การจัดการขยะมูลฝอย การจัดหาน้ำใช้ การจัดการน้ำเสีย การจัดการสิ่งปฏิกูล การป้องกันควบคุมสัตว์และแมลงพาหะนำโรค ผู้ขายของและผู้ช่วยขายในตลาด
The purposes of this study were to examine food safety from venders in a mobile market, Moeiwadi Municipality, Moeiwadi district, Roi Ed province. The food samples of prepared meals and beverages, collected from interview and observation of food venders during August - September 2013, were chemically, biologically and physically analyzed to examine their food qualities. The biological analysis was conducted by using the SI-2 test kits from the country’s Department of Health, but the chemical analysis was conducted by the department’s Mobile Unit for Food Safety.
The results of the study was found that, in terms of the biological safety, there was coliform contamination in food samples (75.3%), food containers and kitchenware (59.7%), and hands of food handlers (27.8%), as well as coliform contamination was more found in liquid meals than others. In terms of chemical safety, there was no contamination of organophosphorus and carbamate insecticides. All the food samples in the market were also not found contaminated with borax (boric acid), formalin, salicylic acid, and sodium hydrosulfite. The polarization of reused cooking oil in all food samples was found passed the standard criteria. In terms of the physical safety, there was no contamination of non-food items. In terms of food safety operation, the personal hygiene of food venders was not found satisfactory. The food handlers were found without uniforms and hats. Without white aprons, they were found dressed in any color. After using toilets, all of them were found to wash their hands with ordinary water and wipe them with their own aprons. In sickness, they were found not to break, but they are still on working with some assistants. The environmental sanitation in the mobile market was not found to meet with eight standard criteria: environmental management, general good manufacturing practice (GMP), waste disposal, water supply, wastewater disposal, excreta management, protection of animals and insect vectors, and hygiene of food handlers.
